Adding Values to Agro-Industrial Byproducts for the Bioeconomy in Vietnam

Abstract: Vietnam, a tropical and developing country, produces a huge amount of agricultural products and food to meet the consumption needs of over 97 million people in the country and for export (earning over US$41 billion in 2020). Approximately 156 million tonnes of agricultural by-products are produced, of which, 88.9 million tonnes comprises by-products after harvesting and processing; the fisheries sector accounts for 1 million tonnes of by-products. Many by-products in the cultivation, husbandry, food-processing, and forestry industries have been processed and used as raw materials, but the processed proportion still remains limited without added value. In this chapter, we focus on the exploitation and enhancement of the added value of by-products of some typical Vietnamese agriculture and food industries such as shrimp, soy milk, starch, cereal, legume, and alcoholic fermentation from the perspectives of a bioeconomy and sustainable development.
